Taco Meat Recipe

We wanted tacos for Cinco de Mayo but we were pressed for time as we had tickets to a dance performance. Armed with ground turkey and a few pantry ingredients, we were in business. The problem with making taco meat at home is it's usually too dry and spills out of the taco shell. I added a can of tomatoes, but then it was too drippy. The solution? Refried beans!

1 lb ground turkey
1 14.5-oz can diced tomatoes
1 16-oz can refried beans
shredded lettuce
taco shells

Season turkey with salt and brown on high heat in a heavy-bottomed pan. Once turkey is no longer pink, add cumin to taste. Pour in a can of diced tomatoes including juice.

Continue to cook on high for about 5 minutes. Add refried beans, stirring to combine. Reduce heat to low and simmer for 5 more minutes.

Warm up taco shells per instructions on the box. I like Trader Joe's taco shells. The store near my house keeps them on a high shelf so they don't get accidentally crushed by careless shoppers.

This is so easy. There's no excuse to eat the mystery meat at Taco Bell.
